ONE POT MACARONI AND CHEESE One Pot Mac and Cheese is a simple version of your classic childhood favorite. It’s creamy, delicious with three different cheeses, it’s a one pot meal that’s ready in under 30 minutes. INGREDIENTS 1 1/2 cups milk 1/2 cup heavy cream 1 tablespoon butter 2 cups dry pasta macaroni, penne, any small pasta will do) 1 1/2 cups grated cheese ( I used Cheddar, Gouda and Jack) 1/2 tsp dry mustard 1 tsp salt INSTRUCTIONS Add milk, cream, salt, dry mustard, pasta and butter into a medium sized pan. Bring the mixture to a simmer, stirring frequently, over medium heat. Once at a simmer, turn heat down to low. Cook and stir frequently for about 20 minutes, until most of the liquid is absorbed. Add 1/4 more milk if pasta is not fully cooked. Remove from heat and stir in cheeses. Spray 9 x 13 baking dish with cooking spray. Press a can of the crescent rolls to the bottom of the dish, making sure to reach edges and keep together. * bake the first layer of crescent roll dough till just done maybe 5-8 minutes. Ingredients 1-1/2 TBSP butter 2 eggs, whisked 12 ounce bag frozen peas and carrots 2 tsp minced garlic (about 4 cloves) salt and pepper to taste 4 cups cooked rice, chilled 3 green onions, thinly sliced 1/3 cup soy sauce (more or less to taste) 1 TBSP oyster or fish sauce 1 tsp toasted sesame oil Instructions In a large skillet,melt 1/2 TBSP of the butter over medium-high heat. Sweet potatoes are one of the clean 15, but we still purchase them organic. Combine your sweet potatoes with fresh beets and you have a tasty treat! We love to cut both into bite size pieces and roast them in the oven. I do about 5-6 sweet potatoes and 2-3 beets on average per week. We use them as a side with dinner, to top our salad or even mash them up like mashed potatoes! I like them cold or warm. If you like them toasty just place them bake into the oven before enjoying.
